3/27/14 ChefElla's Crispy Chicken with Garlic Butter Noodles



CHEFELLA'S CRISPY CHICKEN WITH GARLIC BUTTER NOODLES

Sometimes my Dad makes dinner for us.  He only knows how to makes a few dishes, but they are really good.  He said he learned to make this dish from my Grandma.  It is not fancy, and it is not for every night, but I always look forward to him making it, and to me eating it.  This is a great recipe for you to teach your Dad how to cook.

For this recipe you will need to use the stove and a knife.  If you are not allowed to use the stove or a knife by yourself you can have a grown up help.

1. Wash your hands.
2. For this recipe you will need measuring cups and spoons, a heat proof rubber spatula, a large mixing bowl, a saute pan, a pot for cooking pasta, a strainer , a knife and a cutting board.

ChefElla's Crispy Chicken with Garlic Butter Noodles
Ingredients: (This recipe will make 4 servings.)
1 Lbs.       Chicken Tenders, Raw, or Chicken Breast Sliced into long Strips
4 Tbl.        Olive Oil  
2 Tbl.        All Purpose Flour
                 -If you want to make this recipe gluten free you can use a gluten free flour.
6-7oz       Whole Wheat Spaghetti, Raw (1/2 a box)
                -If you want to make this recipe gluten free you can use a gluten free pasta.
1 Cup      Grape Tomatoes, Cut In Half
1 Tbl.       Butter or Butter Substitute
1/2 tsp    Salt
1/2 tsp    Granulated Garlic
1/8 tsp    Paprika
1 tsp        Oregano Leaves, Dried
Garnish   Parmesan Cheese
Garnish   Fresh Basil, Chopped or Scallions, Thin Sliced.             

3. Cook pasta according to the directions on the box and drain.
4. Return your pot back to the stove and turn on low.  Add 2 tablespoons of olive oil and butter to your
    pot.  When the butter melts add tomatoes and pasta back to the pot and mix well.
5. Sprinkle salt, garlic, paprika and oregano to your pasta and tomatoes and mix well.
6. Pre-heat your saute pan on low.
7. In your large mixing bowl mix chicken and 2 tablespoons of olive oil.  When the chicken is
    coated sprinkle flour over chicken and mix well until the flour coats the chicken.
8. Turn your pan to medium high.  When the pan is hot lay each piece of chicken in the pan.  Let the
    chicken cook for 3-4 minutes.  Turn the chicken over and cook for and additional 2-3 minutes.
9. Serve pasta with chicken and top with Parmesan Cheese, fresh chopped Basil or Scallions.

This is a quick and easy dish to make and enjoy with family and friends.

3/22/14 ChefElla's Shrimp Cakes with Spicy Avocado Sauce


CHEFELLA'S SHRIMP CAKES WITH SPICY AVOCADO SAUCE

I like seafood, but every time I tell my friends I like seafood they all say, "YUCK!"  I think my friends do not like seafood because they have not had the chance to try something they like.  I think they tried one thing once, and said, "I did not like that fish, or shrimp, or crab, so I do not like seafood."  I know they do not say the same thing with candy because I see them trying all sorts of candy until they find their favorite.  I like to share my love of food with my friends, so this week I made a recipe for them to give seafood one more try.  I hope it changes their minds about seafood and about trying new things even though they did not like something the first time.

For this recipe you will need to use the oven, a food processor (cuisinart) and a knife.  If you are not allowed to use the oven, appliances or a knife by yourself you can have a grown up help.

Note:  If you do not have a food processor you can still make this recipe.  You will just need to mince your shrimp and water chestnuts by hand.

1. Wash your hands.
2. For this recipe you will need measuring cups and spoons, a rubber spatula, a large mixing bowl, a small mixing bowl, a food processor, a cookie sheet, a butter knife and fork, and a cutting board.

ChefElla's Shrimp Cakes
Ingredients: (This recipe will make 20-24 appetizer servings.)
1 Lbs.       Shrimp, Cooked, Peeled, De-veined, Tail-off, and Thawed.
                 -A frozen shrimp is o.k. if you thaw it first.  An expensive shrimp is not necessary.
                 -If you like another kind of seafood feel free to substitute it instead of shrimp.
4 oz.        Water Chestnuts (After you drain one 8oz can you will be left with 4oz of Water Chestnuts.)  
1 tsp        Garlic, Fresh Minced (If you only have granulated garlic use 1/4 tsp granulated garlic instead)
                 -Minced is when you cut something into a small dice and then you chop down so that it is
                  in really small pieces.
1/2 Cup   Scallions (Green Onion), Thin Sliced, (2-3 green onions)
                -Wash the green onion and cut off the small root end.  Slice the green onion into thin circles.  Be
                careful because the green onion can roll while cutting it.
2 ea          Eggs
1.5 Cups  Panko Bread Crumbs.
                -There are different kinds of bread crumbs.  Panko are white Japanese bread crumbs that are
                made from a special bread and only contains the white part of the bread.  You can also use
                French bread crumbs called mie de pain (meaning middle of the bread).  Do not use plain bread
                crumbs they contain the crust and are heavier.
2 Tbl.        Sesame Seeds
1/2 tsp      Black Pepper
4 tsp         Soy Sauce

3. Pre-heat oven to 400F.
4. Cut cut shrimp into pieces and put into your food processor.  Chop your shrimp on low until it is in small
    pieces.  Do not blend into a paste.  You still want to be able to see some shrimp pieces.  Put shrimp into
    your mixing bowl.  (See ingredient picture below).
5. Add water chestnuts to the food processor, and chop them into small pieces.  Again do not blend into a
    paste.  Add water chestnuts to the bowl with the shrimp. 
6. In your small bowl mix your egg, soy sauce, and black pepper.
7. Add egg mix to your large bowl and mix well with your shrimp and water chestnuts.
8. Add remaining ingredients and mix until all of the ingredients are combined.  Do not beat or whip the
    mixture.
9. Cover your cookie sheet with foil and spray with pan spray.
10.  Wet your hands and take a heaping table spoon of the shrimp mixture and roll into a ball with your
       hands.  Put the shrimp ball on the pan and pat it gently so that it flattens out a little.
11.  Repeat the process until all of your mix is rolled and patted flat on the tray.  The cakes should not touch.
12.  Put the tray in the oven and bake for 15 minutes.
13.  When the shrimp cakes are done flip them over so that the browned side is facing up.

Spicy Avocado Sauce
Ingredients: (This recipe will make about 1 cup of sauce.)
1 ea         Avocado, Ripe
                -To figure out if an Avocado is ripe you can do one of two things.
                 1.  Ask the produce person nicely if they will pick out a nice ripe avocado for you, or
                 2.  Gently squeeze some avocados.  If they are hard as a rock they are not ready.  A ripe
                      avocado should be just a little soft when you press on the skin.
1 Tbl.      Mayonnaise
                -I use Canola Mayonnaise because it has 1/2 the calories of regular mayonnaise but still has all of
                 the flavor of regular mayonnaise.  You can use whatever kind you like best.
1/2 tsp     Soy Sauce
1/2 tsp     Wasabi Paste, ready to use
1/4 tsp     Garlic, Fresh Minced (If you have granulated garlic, just use a pinch.)

14. Clean the food processor and rubber spatula.
15. Cut the avocado in half lengthwise.  There is a large hard pit in the avocado so you will need to cut
      around it not through it.  Separate the two halves of the avocado and using your butter knife pry out the
      pit.  Take your knife and cut the Avocado while it is still in the skin (see picture below)  Do not cut
      through the skin.  Cut the Avocado one way and then the other to make small squares.  Scoop the
      Avocado out of the skin with your rubber spatula into the food processor. 
15. Add all of the ingredients to the food processor and mix until the sauce is smooth.

Serve your shrimp cakes warm with your spicy sauce.  If you do not like the Spicy Avocado Sauce serve your shrimp cakes with Teriyaki, Plum, or Sweet and Sour Sauce.

3/13/14 ChefElla's Blueberry Secret Smoothie

CHEFELLA'S BLUEBERRY SECRET SMOOTHIE


When I get home from school I am so hungry.  After a long day of reading, math, and recess I just want something to eat.  Sometimes when you are really hungry you choose foods that are not good for you.  Lucky for me my mom makes the best smoothies.  Even though I know they are good for me, I still drink them because they taste great.  This week my Mom took over the blog to share one of her famous after school smoothie recipes.  Make sure you share this recipe with your Mom so that she can make a smoothie for you after school, or anytime you need a snack.

For this recipe you will need to use a blender.  If you are not allowed to use a blender by yourself you can have a grown up help.
1. Wash your hands.
2. For this recipe you will need measuring cups.

ChefElla's Blueberry Secret Smoothie (This recipe will make 2 servings)
Ingredients:
1/4 Cup    Blueberries, fresh or frozen
1/2 Cup    Strawberries, fresh or frozen
1/4 Cup    Spinach, frozen
                 -If you use fresh spinach it will be one 1/4 cup spinach packed full.
                 -If you would like to use a different green leaf vegetable like kale, arugula, or beet tops you
                  may need to use a different amount.  Other greens can be bitter and you may need to use
                  less or more berries to balance the flavor of the smoothie.
1/2            Large Ripe Banana                 
1/2 Cup     Orange Juice
1/3 Cup     Protein Powder (optional)
3/4 Cup     Ice

3. Add all ingredients to your blender, make sure you put the powder on top.
4. Blend on high until all of the ingredients move smoothly in the blender and you cannot see the
    spinach pieces anymore.

Make your own recipe by trying different kinds of fruits, vegetables and juices until you have your own secret recipe.

2/27/14 ChefElla's PB&J Sandwich Cupcakes

CHEFELLA'S PB & J SANDWICH CUPCAKES

I like cooking shows.  You can get really fun ideas for recipes from the different people you see.  The other night I was watching a show that was a cupcake competition.  I did not particularly care for the cupcakes that the contestants made, but one of them made a cupcake sandwich.  I liked the idea and I could not wait to try it, but I did not know what kind of cupcake sandwich to make.  I thought of all of the sandwiches I have eaten, but none of them sounded good as a cupcake.  Then it came to me.  I could make a peanut butter and jelly cupcake.  I looked through different recipes in books and on the web and did not see anything I liked, but I did find a base recipe for a Peanut Butter Cupcake.  I knew it would be a good place to start for one of my recipes.

For this recipe you will need to use a mixer and the oven.  If you are not allowed to use a mixer or the oven by yourself you can have a grown up help.
1. Wash your hands.
2. For this recipe you will need measuring cups and spoons, a butter knife, a stand or electric mixer, a rubber
    spatula, a large non-stick muffin pan, a small bowl, a star tip, a heavy duty quart plastic bag.

ChefElla's PB&J Sandwich Cupcakes (This recipe will make 18-24 servings)
Ingredients:
1 3/4 Cups.    All-Purpose Flour
1 Tbl.             Baking Powder
1/2 tsp           Kosher Salt
1/2 Cup         Peanut Butter (creamy or chunky)
                      -If you do not use peanut butter you can substitute what ever kind of nut butter you like.
1/4 Cup         Butter
3/4 Cup         Sugar
2 ea.              Large Eggs
1 tsp              Vanilla Extract
1 Cup            Milk
                     -If you do not use milk you can substitute soy, flax, coconut, or any other kind of milk.
1 pkg.            Cupcake Liners
1 Cup            Buttercream Frosting, the not whipped variety is best.
3 Tbl.             Raspberry Jelly
                      -You can use whatever kind of jelly you like best.
1 pkg.            Colored Sprinkles-Pick sprinkles that will match the color of the jelly you picked.
                      Pan Spray


3. Preheat oven to 350F.
4. In a small bowl mix flour, baking powder and salt.
5. Add peanut butter and butter to your mixing bowl and mix on medium speed until the ingredients are well
    combined.
6. Turn your mixer off and add sugar.  Turn mixer on medium and beat the mixture until it is fluffy.  It will
    change to a light tan color.
7. Add vanilla and one egg to the mixer on low.  When the egg is mixed in add the second egg and mix until
    it is mixed in.  Mixed in is when you cannot tell the egg from the other ingredients.
8. Turn the mixer to low and alternate adding the flour mixture and 1 cup of milk.  Add 1/4 of the flour
    mixture to the mixing bowl.  Then 1/4 cup of milk.  When the ingredients are mixed in repeat the process
    until the milk and flour mixture are all mixed into the mixing bowl.
9. Remove the mixing bowl from the stand and scrape the bowl with a rubber spatula to make sure all of the
    ingredients are well combined.
10.  To bake, spray the muffin pan with pan spray.  Add one heaping tablespoon of cupcake batter into
       each of the muffin cups.  Bake for 8 minutes.  Check the doneness by sticking one of the
       cupcakes in the center of the pan with your butter knife.  If the knife comes out clean the cupcakes
       are done.  If not cook for 2 more minutes.
11.  Turn out your cupcakes and let cool on a plate.  Repeat step 10 until all of the batter is gone.
12.  Spread out your cupcakes liners.  In the bottom of each liner add one of your mini-cupcakes with
       the flat side facing up.
13.  In your small bowl add your frosting and jelly and mix well.  It may be a little soupy but it is ok.
14.  Cut a small hole in the bottom corner of the quart bag and put your star tip through the hole.
15.  Fill the bag with frosting.
16.  Squirt 1 tablespoon of frosting on top of your mini-cupcakes in the liner.  Top with another mini
       cupcake flat side down to make your sandwich.  Repeat the process until all of your cupcakes are
       made into sandwiches.
17.  Squirt more frosting on top of your cupcakes.  If you know how to make designs you can do that
       also.  Top your cupcakes with the sprinkles and then refrigerate for 1 hour.  This will make the
       frosting set.
       -If you do not have a star tip simply spread your frosting on with a butter knife.

Make your own recipe by trying different kinds of cupcakes and different flavored frostings until you have your own secret recipe.

2/20/14 ChefElla's Mock Creamy Wild Rice Soup


CHEFELLA'S MOCK CREAMY WILD RICE SOUP

I love wild rice soup.  If you have never eaten it before you should really try it.  It is so creamy and rich and flavorful that I could eat it every day.  But I know that it is not good to eat rich food every day, so I decided to make a recipe that I could eat more often.  My wild rice soup is a mock (fake) wild rice soup because it does not have cream, butter, or flour in it.  The soup still tastes creamy and rich and the best part is that you will not be able to tell the difference between my soup and the real one.
If you do not know what wild rice is, it is actually not a rice, but the grain of a particular type of grass.  It cooks like rice and has a nutty flavor.  If you like it you can cook and eat it just like rice.

For this recipe you will need to use a knife and the stove.  If you are not allowed to use a knife or the stove by yourself you can have a grown up help.
1. Wash your hands.
2. For this recipe you will need measuring cups and spoons, a knife, a cutting board, a medium stock
     pot, a small bowl, a mesh strainer, a blender, a peeler and a wooden or plastic spoon.

ChefElla's Mock Creamy Wild Rice Soup (This recipe will make 4-6 servings)
Ingredients:
1 Lb.      Chicken Breast or Tenders, cut into bite size pieces
               -Remember kids like ChefElla have little mouths, so the pieces should be small for a kid, not
               small for a mom or dad.
3/4 cup   Carrot, cut into bite sized pieces (3 - 4 small carrots)
1    cup   White Onion, cut into bite sized pieces (1/2 medium to large onion)
3/4 cup   Celery, cut into bite sized pieces (3 medium celery stalk)
               -Wash celery stalk.  Cut brown ends off of celery.  Cut celery in half lengthwise.  Cut each
               half of celery lengthwise again.  You can continue to do this until the pieces are as thin as you
               want them.  Chop the celery stalks into small pieces.  The thinner the celery is cut, the smaller
               the pieces will be when you chop them.
6 cups     Chicken Stock
1 cup      Wild Rice, Raw
2 cups     Cauliflower, Raw (8oz)
1 tsp       Kosher Salt
1/2 tsp    Black Pepper
1/4 tsp    Garlic Powder
2 tsp       Kitchen Bouquet
               -You can use other browning liquids like Maggi seasoning, but they can have MSG in them.
               If you do not like MSG or if you have an allergy to it, just use Kitchen Bouquet.
2 Tbl        Olive Oil

3. Cook your wild rice according to the directions on the package (generally the ratio is 1 to 4.  This
    means that for every 1 cup of rice you will need to cook it in 4 cups of water.
4. Cut your carrots (peel carrots with your peeler before cutting), celery and onions.  Set aside in your
    bowl.  Cut your chicken into small pieces.
5. When the rice is done strain it through your mesh strainer.  Return your pot to the stove and heat on
    medium high heat.  Add two cups of chicken stock, cauliflower and 1 cup of cooked wild rice to
    your pot.  Cover and simmer for 15 minutes.
6. Put cauliflower, wild rice and stock into you blender and puree (mix on a high speed until it is a
    paste).
7. Return the pot to the stove and turn on medium.  When hot add 2 Tbl. olive oil.  Add carrots, onion
    and celery.  Spread the vegetables evenly on the bottom of the pan.  Let the vegetables sweat on the
    bottom of the pan for 3-4 minutes  without stirring (sweating is when the vegetables cook on a lower
    heat so that they do not become brown but still cook).  The onions will begin to look clear.  Turn the
    pot onto high heat and add the chicken.  Mix the chicken into the vegetables.  Stir every 45 seconds
    to a  minute until all of the chicken is white in color.
8. Add the spices, kitchen bouquet, wild rice, cauliflower puree and stock to the pan.
9. Bring the soup to a boil, turn to low heat and serve.

Top your soup with crackers, serve with bread, or whatever else you can think of.

2/6/14 ChefElla's Sweet & Sour Eggrolls


CHEFELLA'S SWEET & SOUR EGGROLLS

I know that vegetables are good for me, but sometimes I do not like eating them.  Then I remembered, every time I eat chinese food, I eat vegetables.  I really like the eggrolls from the chinese restaurant, but I know that fried foods are not good for me.  So this week I made some good for me eggrolls.  For my eggrolls I picked vegetables that I like and I baked the eggrolls so they were better for me.  For your eggrolls you can pick the vegetables, meat and sauce that you like knowing that they will be better for you then the eggrolls from the restaurant, and you will get healthy from eating your vegetables.

1. Wash your hands.
2. For this recipe you will need measuring spoons and cups, a strainer, a knife, a cutting board, a heat proof rubber spatula, a baking sheet, aluminum foil, a saute pan and a mixing bowl.

ChefElla's Sweet & Sour Eggrolls (This recipe will make 10 - 12 eggrolls)
Ingredients:
1 lb.           Ground Pork
                   -You can substitute ground turkey, chicken, shrimp or tofu if you like them better.
1 Cup         Green Onions, Thin Sliced (About 6 green onions)
                   -Wash your green onions and then cut off the root ends.  Slice the whole green onion
                   including the green and white parts.  
3 Cups       Broccoli Slaw, you can find it in the produce section of the supermarket.
2 Cups       Broccoli, tiny pieces
                   -Buy one small head of broccoli.  Cut the florets (fancy word for the top of the broccoli)
                   away from the stem.  Cut your broccoli into tiny pieces.
2 tsp.          Fresh Garlic, Minced (minced means to chop the garlic into very, very small pieces)
                    -If you do not have fresh garlic you can use 1/2 tsp granulated (dried) garlic.
1 Tbl.         Canola or Vegetable Oil
1 can          Pan Spray (Pam or other brand of spray oil)
2 ea            16 oz Jars of Sweet and Sour Sauce
                   -If you do not like sweet and sour sauce you can use teriyaki, peanut, hoisin, or any other
                   kind of Thai or Chinese sauce your like.
12 ea          Egg Roll Wrappers, you can normally find them in the produce section of the supermarket.           

3. Pre-heat your sauté pan on the stove on medium high heat.  Pre-heat oven to 425F.
4. Add ground pork to the pan.  Stir frequently in the pan and break the meat apart while it cooks.
    When the meat is no longer pink it is done.  Pour your ground meat into your strainer.
    You so not want the eggroll mix to be wet so the juice and oil will drain away from the meat.  Return
    your pan to the stove, but do not clean it.
5. Cut your green onions and measure out the rest of the ingredients.
6. Heat your pan on medium heat.  Add oil to the pan.  Add all of your vegetables and cook for 3-5
    minutes.  Stir every so often so the vegetables do not brown or burn.  Add 1/4 cup water to the pan
    and let the vegetables cook for 1-2 extra minutes.
7. Put the cooked pork into your large mixing bowl.  Pour your vegetables into the strainer.  Let
    vegetables sit for 5-10 minutes.
8. Line a baking sheet with aluminum foil.
9. Mix vegetable, meat and 1/2 cup of Sweet and Sour sauce in your mixing bow.  Mix well.
10. Dampen one paper towel or dish towel.  It should not be very wet.
11. Put your eggroll wrapper onto your cutting board.  Top wrapper with 1/4 cup of mix, and spread
      the mix out.  While you are making one eggroll cover the other eggroll wrappers with your damp
      cloth otherwise your eggroll wrappers will dry out and crack and you will not be able to roll them.


12. Fold the bottom of the wrapper up over the mix.
13. Fold in the sides of the wrapper.  Keep the sides straight.  Using your finger dampen the top triangle
     of the eggroll with water wrapper.  The water will make the eggroll stick and stay closed.

14. Roll up your eggroll and set aside.
15.  Repeat the process until all of your eggrolls are done.
16.  Spray your pan with pan spray and put eggrolls onto the pan.  Spray the finished eggrolls with pan
       spray.
17.  Put eggrolls in the oven and bake for 15 minutes.
18.  Serve eggrolls with the remaining sweet and sour sauce.

1/20/14 ChefElla's Own Mac & Cheese

CHEFELLA'S OWN MAC & CHEESE

Anytime someone makes macaroni and cheese, everyone thinks the same thing, will it taste like my favorite kind from the box?  My answer is a quick no.  Now I know that everyone likes the kind in the box and I like it too, but my mac and cheese is different and I if I wanted it to taste like the box I would just make the box kind.  The thing I like about my mac and cheese is that it is creamy, and cheesy, and it is made with real ingredients not just powder from a box.  I know at first your friends, and maybe even your Dad, may groan and say, "But its not the same!"  Just know that they will like it even though they may not admit it.

1. Wash your hands.
2. For this recipe you will need measuring spoons and cups, a strainer, a whisk, a heat proof rubber
    spatula, and a sauce pan.

ChefElla's Own Mac & Cheese (This recipe will make 4-6servings each)
Ingredients:
3 Cups         Rotini Pasta (Corkscrew Shaped), uncooked
                   -You can use whatever shaped pasta you like.  You can even use gluten free pasta.
1/4 Cup       Butter (1/4 cup is equal to 1/2 of a stick)      
1/4 Cup       Whole Wheat Flour
                  -You can use any kind of gluten free flour for this step.
1 tsp.           Kosher Salt
2 1/2 Cups   Skim Milk
                    -You can use an unflavored milk substitute for this step like, soy milk, flax milk, etc.
1 Tbl            Parmesan Cheese
1 tsp.           Blue Cheese (if you do not have blue cheese you can just skip this ingredient.
8oz.             Cheddar / Jack Cheese
                   -If you just like cheddar or jack or colby, or any other kind of cheese you can use that
                    instead.
1 Cup          Cheddar Cheese

3. Fill sauce pan 3/4 full with water and put on stove. Turn pan on high heat. When the water comes to a boil
    add pasta and cook for the manufacturers recommended amount of time. Remember to mix the pasta in
    the water every few minutes so that it does not stick to the bottom of the pan or to the other pieces.If the
    water begins to foam just add a little olive oil and the foam will go away. When the pasta is finished pour
    into a strainer over the sink.
4. Return your pan to the stove on medium-high heat and when the water is gone from the pan melt your
    butter in the pan.
5. Add your flour to the pan and whisk into the butter.  The mixture of butter and  flour is called a "Roux".
    The mixture will melt and bubble.  Mix the roux every 20-30 seconds.  The roux will begin to turn a light
    brown color and smell like warm buttered toast.
6. Slowly pour in your milk and whisk well until all of the lumps are gone.  Stir occasionally to keep the roux
    from sticking to the bottom of the pan. The mixture of roux and milk is called a white sauce or "Veloute."
7. When the white sauce comes to a boil it will look like a thick soup.
8. Turn the stove to medium and mix in your salt and cheeses.  Mix well and stir slowly until the cheese melts
    into the sauce.  Add the noodles and mix with your spatula.

Top your mac and cheese with bacon, shrimp, sausage, tomatoes or just eat it as is.  Create your own mac and cheese by using your favorite cheeses and create your own famous recipe.
